Oven Roast Beef Hash Recipe
It seems there are always leftover whole cooked potatoes and beef when we serve pot roast for Sunday dinner. Although many of us mix the leftovers and top with mashed potatoes, calling the dish “shepherd's pie,” it really isn’t. Actually shepherd’s pie is made with lamb (you know – shepherds tend sheep not beef), and the actual English (where it originated) name is Cottage Pie. The problem is that the pie is almost exactly like eating the same thing on Monday, and there are a lot of people who prefer not to eat leftovers. One of my favorite dishes to make with the leftovers is Baked Oven Beef Hash which I have been making for years; the original recipe comes from an old (circa 1960) Better Homes and Gardens New Cook Book.

This dish is simple, with very few spices, minimal ingredients, and is quick and easy to put together. If you don’t have a food processor, you can put the meat and potatoes through a food grinder, or you can just chop the ingredients fine. This is comfort food, and leftovers are good fried and topped with fried eggs.
However you serve it, it is good and hearty.

6 Servings

1 small onion, finely chopped
2 cups leftover cooked beef, cut into chunks and pulsed in the food processor
2 to 3 cups cooked potatoes, coarsely chopped or pulsed a few times in the food processor
1/4 cup chopped fresh parsley
1/2 teaspoon freshly ground black pepper
1 teaspoon salt
2 teaspoons Worcestershire sauce
2/3 cup evaporated milk

Topping:
1 tablespoon melted butter
1/4 cup fine dry bread crumbs

  1. Preheat oven to 350°.
  2. Spray a shallow 1-quart baking dish (7" x 9" or 8" x 8") with non-stick spray.
  3. Mix the onion, beef, potatoes, and parsley in a bowl; stir in the pepper, salt, Worcestershire sauce and evaporated milk; sometime a little more milk is needed to moisten it.
  4. Spread in the prepared pan.
  5. Make the topping: Toss the melted butter and bread crumbs; sprinkle evenly over the beef mixture.
  6. Bake about 45 minutes or until heated through and the crumbs are brown. Serve with ketchup.
